Summer is here - Let's work on our salads!

Salads are delicious, fresh, and so good for you. If you get bored when you think about salads, forget it, I'll change your mind about salads. First, think big don't think salad = lettuce or lettuce + tomato+ cucumber… You can add all kinds of greens, veggies, and fruits to your salad and eventually nuts or seeds. Making a salad is quick and really fun. If you are busy, it's a perfect meal. You can start building your salad with green leaves: lettuce (there are many different types), arugula, spinach, kale are the ones that I use most, I also love to add green herbs like parsley, basil, cilantro, chives, mint. Then you can think about colors, red - tomatoes, peppers, purple - cabbage, orange-carrots, peppers, pink-beet root, radish; white- cauliflower, cabbage, and the list goes one. Be mindful when choosing the perfect combination of colors and textures. So how you decide to chop your ingredients will directly affect the taste of your salad. It's good to have a good knife, a slicer, or a thicker grater. The grater is my favorite to work with carrots & beets, and I use the slicer to cucumber, cabbage, radish… But if you only have a knife, don't worry, it's perfect for what you need. The sauce will give a zest in your salad. Some dressings are very light and others not so much. So it's good to rotate the kind of dressing you are using on your salads. Try to avoid buying pre-maid sauces; generally, they have all sorts of unnecessary chemicals, gums, preservers, and coloring. If you have any oil restrictions, a great option is to work with lemon, lime, orange, and spices. I always have in hand a good olive oil, aged balsamic vinegar, lime or lemon, mustard.
